スペイサイドのダフタウンといえば、有名な蒸溜所がひしめくスコッチの中心地です。
1823年の法律改正でウイスキー税が緩和された後、ダフタウンで最も早く合法蒸留所として設立されたのがモートラック蒸留所です。
蒸留所設立後しばらくは経営が上手くいかず、何度もオーナーが入れ替わりましたが、1853年にエンジニアであったジョージ・コーウィー氏がオーナーになった際に軌道に乗り始めました。
そして1890年代末頃、後を継いだ息子のアレクサンダー・コーウィー氏によってポットスチルの数が6基に増設され、モートラック蒸留所の最大の特徴である『2.81回蒸留』が誕生しました。
この蒸留方法は大変複雑で、熟練の職人でも構造を理解するのに半年かかるといわれています。
モートラック蒸留所には初留用と再留用のポットスチルがそれぞれ3基ずつありますが、全てサイズや細かい形状が異なっており、それらを組み合わせて複雑な原酒を生み出しています。
特に一番小さい再留用のポットスチルは「ウィー・ウィッチ(小さな魔女)」と呼ばれていて、この中で行われている蒸留の組み合わせが最も複雑で難解な仕組みとなっています。
この手間を惜しまない仕組みのおかげでモートラックの甘い果実感とミーティと言われる肉っぽい味わいが生み出されています。
こうしたことから、モートラック蒸留所は『ダフタウンの野獣』と呼ばれるようになりました。
12年は、2018年頃からリリース開始されたモートラック蒸留所のフラグシップボトルです。
アメリカンオーク樽とヨーロピアンオーク樽で熟成され、モートラック蒸留所の特徴をしっかりと表現している一本です。

Dufftown in Speyside is the heart of Scotch, with many famous distilleries.
After the whiskey tax was relaxed in 1823, Mortlach Distillery was the first legal distillery to be established in Dufftown.
After the distillery was established, the business did not go well for a while and the owners changed many times, but it started to get back on track when engineer George Cowie became the owner in 1853.
Then, at the end of the 1890s, his son Alexander Cowie took over and increased the number of pot stills to six, creating Mortlach Distillery’s most distinctive feature, the “2.81 distillation”.
This distillation method is very complicated, and it is said that even experienced craftsmen take six months to understand the structure.
Mortlach Distillery has three pot stills for first distillation and three pot stills for second distillation, all of which are different in size and shape, and they are combined to produce complex raw liquors.
In particular, the smallest pot still is called the “Wee Witch” and the combination of distillations that take place in it is the most complex and difficult to understand.
Thanks to this painstaking process, Mortlach’s sweet fruitiness and meaty flavor are created.
For this reason, Mortlach Distillery has come to be known as the “Beast of Dufftown”.
Aged 12years is the flagship bottle of Mortlach Distillery, which began to be released around 2018.
Aged in American and European oak barrels, this is a bottle that fully expresses the characteristics of Mortlach Distillery.
