「スコットランドの伝統的な製法で、アイラモルトのようなウイスキーを日本で作りたい」という強い思いで、堅展実業株式会社の社長である樋田恵一氏が選んだのは北海道東、厚岸町の地でした。
日本で数少ないピートが採れる土地であり、潮気を含んだ深い海霧が頻繁に発生する湿原地帯である厚岸は、アイラモルトをこよなく愛する樋田氏にとっては理想的な土地でした。
蒸留所の建設が完了し、2016年に蒸留を開始、仕込み水にはホマカイ川の水を使用しています。
この水はピート層を通っているため茶褐色をしており、アイラ島と共通する点と言えます。
厚岸蒸留所ではワインの世界などで使われるテロワールの考えを重要視しており、北海道地元の大麦麦芽と仕込み水とピートを使い、熟成樽には北海道で獲れた希少なミズナラを使用するなど全て北海道産のウイスキー作りを目指しています。
2020年に第1弾をリリースした二十四節気シリーズは、1年を24等分し、それぞれを季節として名付けた日本古来の暦になぞらえて、毎回限定リリースしているシリーズです。
「立春」はシリーズ第14弾で、2024年の２月にリリースされました。
立春（りっしゅん）は2月4日頃の二十四節気にあたり、二十四節気の最初の節気となります。
暦の上では春が始まる日を指し、一年の幕開けとなる節気です。
これまでにリリースされてきた二十四節季シリーズの中では最もピーティーと称されます。
ピーティーなだけではなく、それに負けないほどの華やかな香り。
本場のスコットランド・アイラ島のウイスキーとは一線を画す“ジャパニーズアイラ”。

Driven by a strong desire to “produce a whisky like Islay malt in Japan using traditional Scottish methods,” Keiichi Hida, president of Kenten Jitsugyo Co., Ltd., chose Akkeshi Town in eastern Hokkaido.
Akkeshi is one of the few places in Japan where peat can be found, and its marshland terrain, where thick, salty sea fog frequently occurs, made it the ideal location for Hida, a lover of Islay malt.
Construction of the distillery was completed and distillation began in 2016, with water from the Homakai River used for brewing.
This water is brown in color because it passes through a peat layer, a similarity to that of Islay.
Akkeshi Distillery places great importance on the concept of terroir, which is used in the world of wine and other fields, and aims to produce whisky that is entirely made in Hokkaido, using local barley malt, brewing water, and peat, and using rare Mizunara oak harvested in Hokkaido for aging casks.
The Twenty-Four Solar Terms Series, which first released in 2020, is a limited-edition series inspired by the ancient Japanese calendar, which divides the year into 24 equal parts and names each season.
“Risshun” is the 14th in the series, released in February 2024.
Risshun, or the beginning of spring, falls on around February 4th and is the first of the 24 solar terms.
It marks the start of spring on the calendar and marks the beginning of the new year.
This whisky is said to be the peatiest of all the whiskies in the Twenty-Four Solar Terms series released so far.
Not only is it peaty, but it also has an equally gorgeous aroma.
“Japanese Islay” is a whisky that sets itself apart from the authentic whisky from Islay, Scotland.
