伝統ある大手ブランドや新しく生まれたクラフト蒸留所まで含め、日本には現在100ヶ所以上のウイスキー蒸溜所があると言われております。この大谷ウイスキーを製造している新潟亀田蒸溜所は、元々は印章（はんこ）メーカー最大手「株式会社大谷」 に勤めていた堂田浩之氏が責任者となり、2019年に蒸留所を設立。「新潟から世界的に有名なウイスキーを。」という信念で2021年から蒸溜、熟成を開始しました。
鹿児島県の本坊酒造などの既存蒸留所からウイスキー作りや蒸留所の施設に必要な知識を幅広く様々な角度から学び、修行を重ね製造をスタートされたそうです。堂田氏は万人受けしやすいウイスキーではなく、1万人に1人の人にこの大谷ウイスキーが美味しいと言ってもらえるような自分好みのウイスキーを目指して作られています。
使用している麦芽も地産地消を目指し、こだわり抜かれた新潟県産のものを出来るだけ使用し、仕込み水には新潟の銘酒「越乃寒梅」と同じ阿賀野川の軟水を使用。
自社蒸溜のモルト原酒を100%使用し、小規模ながらも高品質なジャパニーズシングルモルトウイスキーを製造しています。
商品名は大谷ウイスキーですが、蒸留所名は新潟亀田蒸留所となっております。
2021年に未熟成原酒の部門で世界最高賞を受賞したこのボトルは、星座をコンセプトにデザインされているゾディアックサインシリーズの第一弾でうお座がモチーフ。ジャパニーズウイスキーの定義を満たしたことで2025年の3月に満を持して数量限定でリリースされました。
ファーストフィルバーボン樽の原酒をベースにシェリー樽などの様々な樽を組み合わせて、最良の味わいを目指してつくられています。アルコール度数が50%と基本的な他のウイスキーと比較して少し高めですが、複数の樽を使用することにより引き出された芳醇な香りと熟れた果実のような酸味と甘味。絶妙なバランスで築き上げられた良質な味わいが、喉を通り抜けたあとも味覚と嗅覚を楽しませてくれます。

It is said that there are currently over 100 whiskey distilleries in Japan, including established major brands and newly established craft distilleries. Niigata Kameda Distillery, which produces Otani Whiskey, was established in 2019 by Hiroyuki Doda, who previously worked for Otani Co., Ltd., the largest seal manufacturer in Japan. With the belief of “creating a world-famous whiskey from Niigata,” distillation and maturation began in 2021.
Doda reportedly learned a wide range of knowledge about whiskey making and distillery facilities from existing distilleries such as Honbo Shuzo in Kagoshima Prefecture, and after much training, began production. Mr. Doda aims to create a whiskey that appeals not to everyone, but to one in 10,000 people who will say that Otani Whiskey is delicious—a whiskey that reflects his own personal taste.
The malt used is carefully selected and sourced from Niigata Prefecture, aiming for local production and consumption. The water used in the brewing process is the same soft water from the Agano River used for Niigata’s famous sake, Koshino Kanbai.
Using 100% malt whisky distilled in-house, this distillery produces high-quality Japanese single malt whisky on a small scale.
The product name is Otani Whisky, but the distillery name is Niigata Kameda Distillery.
This bottle, which won the world’s highest award in the unaged whisky category in 2021, is the first in the Zodiac Sign series, designed with constellation concepts in mind, and features Pisces as its motif. Released in limited quantities in March 2025, after meeting the definition of Japanese whisky, it was finally unveiled.
Based on whisky aged in first-fill bourbon casks, it is crafted using a combination of various casks, including sherry casks, to achieve the best possible taste. While the alcohol content is slightly higher at 50% compared to other basic whiskies, the use of multiple casks brings out a rich aroma and a balance of acidity and sweetness reminiscent of ripe fruit. The exquisitely balanced, high-quality flavor continues to delight the taste and smell even after swallowing.
The aftertaste is gentle and long-lasting, with a diverse range of flavors that change over time. What kind of Japanese whisky does Niigata Kameda Distillery aim to create? This is the beginning of that vision.
