アイルランド共和国と、英国領である北アイルランドは、かつてスコットランドを凌ぐ生産量を誇っていたウイスキーの名産地です。
また、確実な記録ではないですが最古のウイスキー発祥の地であるという説もある、由緒正しいウイスキーの国です。
度重なる世界大戦や連続式蒸留機の発明、主な輸出先であったアメリカの禁酒法、そしてアイルランドでの悪徳ボンダーの横行が重なり、アイリッシュウイスキー業界全体が衰え、一時期はほぼ全ての蒸留所が閉鎖に追い込まれました。しかし、今でも根強いファンがおり、近頃は新しく稼働を開始した蒸留所なども増えてきています。
また、1800年代になってから導入された麦芽税への対策として誕生した、未発芽の大麦を使用して作られる「シングルポットスチルウイスキー」もアイリッシュウイスキーの大きな特徴です。
シングルポットスチルウイスキーを名乗るためにはモルトの使用量が30%以上、未発芽の大麦の使用量が30%以上で、単式蒸留器で3回の蒸留をする事が法律で定められています。
未発芽の大麦を使うことで発酵が遅れ、独特なオイリーさが生まれ、3回蒸留によって雑味が取り除かれたクリアな味わいになります。
レッドブレストはこのシングルポットスチルウイスキーの代表格ともいえるブランドです。
1900年代初頭のアイルランド独立戦争の只中、ギルビー社によってレッドブレストは発売されました。
戦争で人々は貧しくなり、庶民が高価な蒸留酒に気軽に手を出しづらくなったことから、当時の上流階級であった聖職者に準えて「聖職者のウイスキー」と呼ばれていました。
レッドブレストという名は、ラベルにも描かれているヨーロッパコマドリを指しています。
この鳥はヨーロッパでは非常にポピュラーな鳥であり、磔にされたキリストのイバラを引き抜こうとした際に血がついて胸が赤くなったという伝承もあり、こちらも「聖職者の鳥」と呼ばれています。
ブランドが出来た当初はダブリンにあるボウストリート蒸留所の原酒を用いて造られていましたが、前述のアイリッシュウイスキー衰退に伴い1971年に原酒の提供が止まってしまいます。
その後にアイリッシュディスティラーズ社によってブランドが建て直され、現在はアイルランド南部、コークに新設された新ミドルトン蒸留所で造られています。
レッドブレスト15年は2005年に発売されました。
オロロソシェリー樽に加え、バーボン樽も使用した15年はリッチで豊かな味わいにベリー系のフルーツも香る繊細な仕上がりになっています。

The Republic of Ireland and Northern Ireland, which is a British territory, are famous whiskey producing regions that once boasted a production volume that surpassed that of Scotland.
It is also a country of long history, and although there is no definitive record, there is a theory that it is the birthplace of the oldest whiskey.
The Irish whiskey industry as a whole declined due to a series of world wars, the invention of the continuous still, Prohibition in the United States, which was the main export destination, and the prevalence of unscrupulous bonders in Ireland, and at one point almost all distilleries were forced to close. However, there are still die-hard fans, and recently there has been an increase in new distilleries that have started operating.
Another major feature of Irish whiskey is the “single pot still whiskey,” which is made using unmalted barley and was created as a countermeasure to the malt tax introduced in the 1800s.
To be called a single pot still whiskey, the law requires that the amount of malt used is more than 30%, the amount of unmalted barley used is more than 30%, and it must be distilled three times in a single pot still.
The use of ungerminated barley slows down the fermentation, creating a unique oiliness, and triple distillation removes impurities for a clear taste.
Redbreast is a brand that can be said to be the representative of this single pot still whiskey.
Redbreast was released by Gilbey in the midst of the Irish War of Independence in the early 1900s.
The war made people poorer, and it became difficult for ordinary people to easily purchase expensive distilled spirits, so it was called “clergyman’s whiskey” in reference to the clergy, who were the upper class at the time.
The name Redbreast refers to the European robin depicted on the label.
This bird is very popular in Europe, and there is a legend that its chest turned red with blood when it tried to pull out the thorns of the crucified Christ, so it is also called the “clergyman’s bird.”
When the brand was first created, it was made using raw liquor from Bow Street Distillery in Dublin, but due to the decline of Irish whiskey mentioned above, the supply of raw liquor stopped in 1971.
The brand was later rebuilt by Irish Distillers, and is now produced at the new Midleton distillery in Cork, southern Ireland.
Redbreast Aged15 years was released in 2005.
The Aged15 years, which uses bourbon casks in addition to Oloroso sherry casks, has a rich, full-bodied flavor with a delicate finish that also has the aroma of berry fruits.
Redbreast has survived turbulent times and continues to soar in modern times, and this Aged15 years is a step above the standard Aged12 years.
