
“エッセンスオブサントリー“シリーズは、2018年に第一弾がリリースされ翌年2019年にシリーズ第二弾として、3種類のスパニッシュオーク樽を使用して熟成されたウイスキーを発売しました。
山崎蒸留所では、熟成前の工程や熟成樽の種類を変えることによって、多種多様な原酒を生み出し続けています。今回使用されているスパニッシュオークとは、名前の通りスペイン産ヨーロピアンオークの木材で、シェリー酒を熟成させた後にウイスキーの熟成に再度使われることが多く、タンニンが非常に多く含まれていて鼻に抜けるスパイシーさと複雑で上品な甘味がプラスされる事が特徴です。
このモンティージャワインカスクとは、スペイン南部に位置するモンティージャ・モリレス地区の酒精強化ワインの熟成に使用されたスパニッシュオーク樽を使い9年もの間、熟成させた原酒で、濃厚で上品な甘さと最後まで残る優雅な余韻が口内や鼻に広がります。モンティージャの酒精強化ワインに使われる白ブドウは、基本的にペドロヒメネスが使用されることが多く、このぶどうは糖度が高く、甘口のシェリー酒にも使われている非常に有名な品種でもあります。ですが、モンティージャでは辛口の酒精強化ワインを作る際にもこの品種が使われることがあります。一部のワインは酒精強化(アルコール添加)を行わずに作る製法の為、シェリー酒とは分類されずに出荷されます。しかし熟成方法は、スペインで作られるシェリー酒では一般的なソレラシステムで熟成を行っています。仕上がりも濃厚で、舌に残るような甘さと少しの酸味がバランス良く混ざり合い、バランスのとれた仕上がりです。
ラベルには、スペインを象徴する赤系統色を背景に、「情」という漢字が墨の文字でデザインされていて、スペインと日本の2つの国の特徴をうまく表現しています。
山崎蒸留所が日本で初めて国産ウイスキーを発売してから長年培ってきた経験を基に、ブレンダーが匠の技術と革新的な発想で新しく作り上げた1本。サントリー社の恐れず挑戦し続けるという信念が表れている一本です。
The “Essence of Suntory” series saw its initial release in 2018, followed in 2019 by a second wave featuring whiskies matured in three different types of Spanish oak casks.
At the Yamazaki Distillery, a wide variety of base whiskies are continuously created by varying pre-maturation processes and cask types. The Spanish oak used here—as the name implies—is European oak from Spain. Often reused for whisky maturation after having held sherry, this wood is rich in tannins, imparting a spicy note that rises through the nose along with a complex, elegant sweetness.
The “Montilla Wine Cask” expression features whisky matured for nine years in Spanish oak casks previously used for fortified wine from the Montilla-Moriles region of southern Spain. It offers a rich, refined sweetness and an elegant, lingering finish that resonates across the palate and nose. The white grape variety primarily used for Montilla fortified wines is Pedro Ximénez; known for its high sugar content, it is also a famous variety used in sweet sherries. However, in Montilla, this same variety is sometimes used to produce dry fortified wines. Because some of these wines are made without fortification (the addition of alcohol), they are shipped without being classified as sherry. Nevertheless, they are matured using the Solera system, a method common to Spanish sherry production. The resulting whisky is rich and well-balanced, harmonizing a sweetness that coats the tongue with a subtle acidity.
The label features the kanji character for “passion” (*jō*) rendered in ink-wash style against a background of red hues—a color symbolic of Spain—skillfully expressing the characteristics of both Spain and Japan. This whisky was crafted by blenders using masterful techniques and innovative ideas, drawing upon the extensive experience the Yamazaki Distillery has cultivated since releasing Japan’s first domestic whisky. It embodies Suntory’s unwavering spirit of taking on bold challenges.
