ビハインドザカスク社は、澤田凌氏が2020年に「ソムリエがサーブするウイスキー」をコンセプトに青森県で創業し、2022年に北海道函館市に移転した独立瓶詰め業社(インディペンデントウイスキー)です。独立瓶詰め業社とは、世界各国から選び抜いた蒸留所から樽のまま原酒を輸入し、自社工房で熟成からボトリングまでの工程を行っています。

完成したウイスキーをワインボトルに詰めコルクで栓をするという独自のやり方で、個性的でハイセンスなウイスキーやスピリッツを輩出しています。

このビハインドザカスク社の大きな特徴のひとつでもある真っ白なラベルには「empty label」と呼ばれる「空白こそが可能性」として、ウイスキーが長い年月をかけ熟成させる事で出来る更なる旨味の可能性、味わう人への至福の時間の可能性を真っ白なラベルで表現しています。様々なベクトルから可能性を追求することによって、見つかる新たな可能性を信じ研究を続けています。

澤田凌氏は2023年にワイン醸造所の跡地を利用し、「ディ・トリッパー蒸留所」という函館初のウイスキー蒸溜所を設立。北海道産の大麦モルトを使用して少量生産ながらもこだわりのあるウイスキーの製造も行っています。

このGNR-13は、同社設立後最初のリリース。ファーストフィル・シェリーバットが使用されていて、2013年からおよそ8年間熟成、2021年に瓶詰めされたボトルです。ファーストフィル・シェリーバットとは、シェリー酒の熟成に使用された樽にウイスキーを入れ、熟成させる方法の事でファーストフィルとは、熟成を行うことが1回目の樽を指しています。

使われている原酒は非公開のボトルが多いのですが、商品名の英語と数字からある程度の予想ができ、「GNR−13」だとスペイサイド地区にあるグレンロセス蒸溜所で2013年に蒸留された原酒であると言われています。ビハインドザカスク社のボトルは、基本的に国内で瓶詰めされるのですが、イギリスのスコッチシングルモルトウイスキーの制約によって、日本国内での瓶詰め作業が行えず、イギリスのスコットランド国内で瓶詰め作業を完了してから届けられています。

このボトルは熟成年数があまり長くない為、加水をしてアルコール度数を下げ口当たりが柔らかく滑らかな飲み心地に仕上がっています。

シェリー樽由来のドライフルーツや樽の木材の香りに、チョコレートやキャラメルのようなほろ苦さが絡み合いながら、複雑でも素晴らしい仕上がりになっています。限定生産で流通数が少ないウイスキーですので是非一度ご堪能ください。

 

Behind the Cask is an independent whisky bottler founded in Aomori Prefecture in 2020 by Ryo Sawada—based on the concept of “whisky served by a sommelier”—and relocated to Hakodate, Hokkaido, in 2022. As an independent bottler, the company imports unblended whisky in casks from carefully selected distilleries around the world and handles the entire process from maturation to bottling at its own facility.

They produce distinctive, stylish whiskies and spirits using a unique method of bottling the finished product in wine bottles sealed with corks.

A key feature of the company is its stark white label, known as the “empty label.” This design embodies the philosophy that “emptiness represents possibility”—symbolizing the potential for enhanced flavor developed through years of maturation and the promise of blissful moments for the drinker. The company continues its research, believing in the new possibilities discovered by exploring potential from various angles.

In 2023, Ryo Sawada established “De Tripper Distillery”—Hakodate’s first whisky distillery—utilizing the site of a former winery. There, he produces small-batch, meticulously crafted whisky using Hokkaido-grown malted barley.

“GNR-13” marks the company’s inaugural release. It was matured for approximately eight years—starting in 2013—in a first-fill sherry butt and bottled in 2021. A “first-fill sherry butt” refers to a cask previously used to age sherry that is filled with whisky for its first maturation cycle; “first-fill” indicates that this is the initial time the cask is used for whisky maturation. While the specific source whiskies used are often undisclosed, the English letters and numbers in the product name offer clues; for instance, “GNR-13” indicates a whisky distilled in 2013 at the Glenrothes distillery in the Speyside region. Although Behind the Cask typically bottles its products domestically, regulations governing Scotch single malt whisky prevent this specific bottling process from taking place in Japan; consequently, these whiskies are bottled in Scotland before being imported.

As this whisky has not undergone extensive aging, it has been diluted with water to lower the alcohol content, resulting in a soft, smooth mouthfeel.

Aromas of dried fruit and cask wood—derived from sherry casks—intertwine with the bittersweet notes of chocolate and caramel, creating a complex and magnificent flavor profile. This is a limited-production whisky with very limited availability, so we highly recommend experiencing it for yourself.
