ウイスキー発祥の地とも言われるイギリス領北アイルランド。その更に北端に位置するブッシュミルズ村のオールド・ブッシュミルズ蒸留所は最古のウイスキー蒸留所としても有名です。
蒸留所の近くにはブッシュ川が流れており、その昔この川の水量を利用し製粉場が建てられたことから「ブッシュミルズ(ブッシュ川の水車)」という地名がつけられました。
英国王ジェームズ1世に王室公認蒸留所の免許を下賜された1608年に創業されたことを主張しており、ボトルにも1608年と刻んで世界最古の蒸留所を名乗っていますが、その時代に操業していたことを証明する確かな証拠となる文献が残っておらず、未だに議論の的となることもしばしばあります。
こちらでは伝統的な3回蒸留を守っています。また、アイリッシュウイスキーには1850年代に発行された麦芽税制度への対策という時代背景から、未発芽の大麦を使ってウイスキー作りをするという伝統がありますが、ブッシュミルズは100%アイルランド産のノンピートモルトを使用する事に強いこだわりを見せています。
ブッシュミルズ16年は、オロロソシェリー樽とバーボン樽の熟成原酒をバッティングし、さらに6〜9ヶ月間ルビーポートワイン樽でフィニッシュをかけています。スパイシーな一面を覗かせつつも甘く余韻が続き、飲む人を楽しませてくれます。

British Northern Ireland is said to be the birthplace of whisky. The Old Bushmills Distillery in the village of Bushmills, located further north, is famous as the oldest whiskey distillery.
The Bush River flows near the distillery, and a flour mill was built in the past to utilize the water from this river, hence the name “Bushmills”.
The company claims to have been founded in 1608, when it was granted a royal distillery license by King James I of England, and the year 1608 is engraved on the bottle, calling it the world’s oldest distillery. However, there are no documents remaining that prove that it was in operation at that time, and it is still often the subject of debate.
Here we follow the traditional triple distillation method. Irish whiskey has a tradition of making whiskey using ungerminated barley, in response to the malt tax system issued in the 1850s. Bushmills is very particular about using 100% Irish unpeated malt.
Bushmills Aged16 years is aged in Oloroso Sherry barrels and Bourbon barrels, then finished in Ruby Port wine barrels for 6 to 9 months.
Although it shows off its spicy side, it has a sweet aftertaste that will delight those who drink it.
